The third release in Old Soul's Estate Collection, this 7-Year Straight Bourbon Whiskey is crafted entirely in Mississippi, from grain to glass. Distilled from a mash bill of 65% corn, 28% wheat, and 7% sorghum, it was pot distilled and matured in a mix of American oak barrels with char levels 2, 3, and 4. Entering the barrel at 106 proof, this bourbon has spent seven years aging under Mississippi’s heat and humidity, developing into an earthy, richly nuanced whiskey.

NOSE
Sweet and earthy, with floral honey and vanilla layered over nostalgic hints of bubble gum and gentle baking spice.

PALATE
Soft, sweet, and nutty, with rich flavors of molasses and caramel, supported by warm undertones of almond.

MOUTHFEEL
