Gerard Bertrand Cremant de Limoux Brut Sparkling Wine
The First Production of fizzy wines was produced in Limoux documented in 1531. It is believed that Dom Perignon visited the abbey in Limoux to further his interests of the church and his winemaking skills 100 years later. The vineyards have an altitude of 650 to 1300 feet above sea level which offers a cooler climate than that typical of the Mediterannean. Nestled into the high valley of the Aude (close to the Pyreneese Mountains), the appellation comprises 41 unique communes and 4300 acres planted to vine.
The fermentation begins in stainless steel vats just as still white wines.
Following the requirements of methode traditionnnelle (in champagne known as methode champenoise), a second fermentation happens in the bottle and then disgorge with a liqueur dexpdition depending on desired sweetness/dryness.
Chardonnay 70% - Mauzac 10% - Chenin Blanc 20%
With great acidity and balance, food choices are endless including fruit and nuts, game, salads, pastas or an aperitif. Serve chilled between 42 and 47 degrees.
The wine has a pale straw color with hints of green reflects at the edge of the glass. The bubbles are tiny and very elegant.
Its aromas are very fruity with a hint of biscuits, hazelnuts and flowers. This sparkling wine is elegantly balanced, complex and well structured with a long an crisp mineral finish.
