Cool fermented with a serious regimen of pump-overs in the early fermentation to extract the soft tannins and color during the aqueous phase. They then press before the fermentation reaches dryness to maintain the wines lush tannin structure. Finally, they put the wine in premium barrels for aging.

Cool Fermentation Keeping the must cool during fermentation helps create a slower fermentation and allows the wine to retain more aromatic properties as well as complexity of flavor and body.

Cupcake vineyard works hard to craft the richest, smoothest and elegantly-textured wines. This full-bodied yet smooth merlot displays supple tannins with flavors of red cherries that evolve into decadent layers of cocoa and espresso and a smooth layered finish. Reminiscent of that chocolate cherry caked that used to call for you at the corner bakery. Serve with pork tenderloin with a port-fig reduction sauce or decadent chocolate molten cake.
