Whiskey Del Bac Sentinel Rye Whiskey

Driven by a curiosity to give traditional rye a Southwest twist, the distillery team created Sentinel, a whiskey that bridges Indiana’s distilling heritage with the soul of the Sonoran Desert. Because the team remains dedicated to their handcrafted single malts, they sourced a bold, high-rye blend (95% rye) from Indiana to serve as the foundation for this experiment.

The spirits are finished in freshly harvested mesquited Whiskey Del Bac casks. The liquid is filtered across a bed of mesquite charcoal, a byproduct of the distillery's own malting process. The intense heat of a Sonoran summer accelerates the interaction between the wood and the whiskey.

The final result is a striking straight rye that maintains its spicy, traditional character while being smoothed by the rounded, earthy essence of mesquite. Sentinel stands as a testament to the distillery's "what if" philosophy, blending the oldest whiskey style in America with a profound love for the desert.
