Old Commonwealth Distillery is a revived Kentucky whiskey company based on the historic Commonwealth/Hoffman distillery site in Lawrenceburg, Kentucky, a property with roots dating back to 1889 and deep ties to bourbon history, including its later ownership by Julian Van Winkle III. Relaunched by Zachary Joseph and Andrew English, the company focuses on resurrecting forgotten bourbon brands and honoring the site's legacy through limited-release, premium whiskeys while preserving the heritage of one of bourbon’s most storied locations.
No artificial sweeteners were used, only real organic honey is placed inside a new Kelvin Cooperage Char #3 oak barrel. The process creates a true double-oaked whiskey, adding rich color and depth while maintaining balance rather than excessive sweetness. The honey barrel is rolled daily for more than a month, allowing the honey to penetrate the oak fully before every bit of honey is drained from the barrel. This extra step avoids excess sediment and prevents the whiskey from becoming overly sweet or syrupy.
Vintegrity's single barrel comes from Kentucky Nectar’s spring lot, meaning the whiskey matured through the winter months before finishing. The mashbill is 64% corn, 24% wheat, and 12% malted barley. The base whiskey is approximately 5.5 years old (closer to 6 than 5) though the double-oaking process requires the later age statement to be used. This particular barrel spent roughly four months finishing in the honey-conditioned oak before it was deemed ready for bottling.
