Building on the double aging process pioneered by Dewar's first Master Blender, AJ Cameron, the current Master Blender, Stephanie Macleod and her team have created a four stage aging process, creating whiskies that offer the ultimate in smoothness. Since its inception in 2019, expressions within the range have picked up multiple accolades. In this latest iteration of the Double Double collection, Dewar's has taken their innovative practice to the next level by adding an extra dimension to the process: Stone Toasting.

Before any cask is used for maturation, heat is applied to the inside to help break down its solid structure and open up the wood for interaction with the whisky maturing inside. This allows the whisky to develop cask-influenced flavors, color, and intricate characteristics. Unlike charring which involves direct contact between wood and flames, toasting is a more delicate method of treating the cask which yields more intense and super smooth flavors. When stones are incorporated into this stage, they are placed in a metal cylinder within the cask, gradually emitting heat to gently open the oak's pores. Generally, utilizing different stones, adjusting toasting durations, and employing various oak types can yield diverse flavor combinations in the final whisky.

This Dewar’s Double Double 21-year-old whisky has been evenly stone toasted with Icelandic Magma stones and finished in French Oak casks. This has aided the development of succulent notes of cinnamon, cloves, creamy caramel and baked apples with toasted cereals.
