Whiskey takes time. Castle & Key started this journey in 2014, barreling their first product in 2016. Each year, they select the best barrels from that season and release new batches that highlight different flavor profiles.
Each batch of Restoration Rye Whiskey is blended using a series of pods. Each pod is created by grouping barrels to create a specific sensory profile.
